In the spirit of my last article about the "Low-Waste Food" trend and as part of my spring cleaning routine, I decided to take a closer look at the items in my pantry and fridge. Despite regularly cleaning my fridge every two weeks, I discovered some neglected ingredients that could be used to create some delicious dishes.
Voila! I've whipped up some quick and easy dishes using these ingredients, but I must disclose that I did include a few other items that weren't on the list to complete some of the recipes.
Here's a list of the items I found:
flour, brown rice, canned salmon, canned tuna, frozen fries, frozen vegetables, coconut cream, fresh dill, dried oregano, dried basil, garlic powder, paprika, curry powder, chili powder, peri peri sauce, cumin powder, canned diced tomatoes, canned corn, macaroni pasta, canned sardines, onion powder, jerk seasoning powder, and masala powder.
- Salmon and Rice Bowl
- Cook 1 cup of brown rice according to package instructions.
- Drain and flake a can of salmon.
- In a small bowl, mix together 1 tablespoon of coconut cream, 1 tablespoon of fresh dill (chopped), and 1/2 teaspoon of onion powder.
- In a large bowl, mix together the cooked rice, the flaked salmon, and the coconut cream mixture.
- Serve the rice and salmon mixture in bowls, topped with a sprinkle of dried oregano and fresh dill.
2. Tuna and Vegetable Stir-Fry
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add 1 cup of frozen vegetables and 1 teaspoon of garlic powder to the skillet and stir-fry for 2-3 minutes.
- Drain and flake a can of tuna and add it to the skillet along with 1 teaspoon of curry powder and 1/2 teaspoon of chili powder.
- Stir-fry for another 2-3 minutes.
- Serve the stir-fry over a bed of brown rice, topped with a drizzle of peri peri sauce.
3. Sardine and Tomato Pasta
- Cook 1 cup of macaroni pasta according to package instructions.
- In a separate saucepan, heat 1 tablespoon of olive oil over medium heat.
- Add 1/2 teaspoon of jerk seasoning powder and 1/2 teaspoon of masala powder to the saucepan and cook for 1-2 minutes.
- Drain and chop a can of sardines and add them to the saucepan along with a can of diced tomatoes and a can of corn (both drained).
- Simmer the mixture for 5-7 minutes.
- Serve the sardine and tomato sauce over the cooked pasta, topped with a sprinkle of dried basil and paprika.
4. Baked Fries with Spicy Dip
- Preheat the oven to 425°F (220°C).
- Spread a package of frozen fries on a baking sheet and bake for 20-25 minutes, or until crispy.
- In a small bowl, mix together 1/2 cup of coconut cream, 1/2 teaspoon of cumin powder, and 1/2 teaspoon of paprika.
- Serve the baked fries with the spicy coconut cream dip on the side.
