Let’s Do The Funky Turkey!

Hello all!  Well I’ve put together another delectable dish to get my Mom back on a healthy diet.  I did spoil her a bit with the Turkey but, I made sure this turkey can be gobbled up (pardon my pun!) without skin or fat.

When I was making this dish,  it so happened that some fabulous old school funk music was playing on the radio.  Mom was lovin it and she was singing along while I was movin and groovin in the kitchen.  I hope you enjoy this recipe!  Let’s do the Funky Turkey!


Funky Turkey Stew


  • 1 Turkey breast –skinned and all fat removed sliced in small pieces
  • 1 tbsp. jerk sauce
  • 1 tbsp. fish and meat sauce (optional)
  • 3 Sprigs of fresh thyme
  • 3 Sprigs of fresh rosemary
  • 4 Sprigs of fresh dill chopped
  • 2 Bay leaves
  • 1 tbsp. of cumin powder
  • 1 tbsp. Of coriander powder
  • 2 tbsp. of curry powder
  • 2 tsp of vegan vegetable based butter
  • 1 ½ cup of vegetable broth
  • 1 ½ cup of coconut milk
  • 2 tbsp. of avocado oil
  • 3 cups of brown ponni rice (or any rice of your liking)
  • 3 tsp of sea salt or to taste
  • 1 tsp of scotch bonnet pepper sauce
  • 6 Rainbow carrots (purple, red, orange, yellow, orange, white)-chopped small
  • 1 Russet potato chopped in cubes
  • ½ red bell pepper chopped
  • 1 Vidalia onion chopped
  • 3 Cloves of garlic finely chopped
  • 1 Roma tomato chop
  • 1 tsp. white pepper
  • Slow cooker/Crock pot
  • Medium sized pot for cooking rice
  • A whole heap of FUNKY good energy!

Putting it together

  • Set crockpot to high and add 2 tbsp. of avocado oil to crockpot
  • Add chopped
    • rainbow carrots,
    • potato
    • Onions
    • Red bell pepper
    • Roma tomato
    • Garlic
    • Thyme (2 sprigs)
    • Rosemary
    • Dill
    • Green onions
    • 1 tsp. of sea salt
  • Mix all together in crockpot and let simmer

Preparing the turkey slices

  • Squeeze juice from one lime onto turkey slices and rub in thoroughly
  • Add 2 tsp. of sea salt to turkey slices and rub in thoroughly
  • Add 1 tbsp. of jerk sauce and rub in thoroughly
  • Add 1 tbsp. of fish and meat sauce (optional) rub in thoroughly
  • Add in cumin and coriander powder rub in thoroughly

Cooking turkey stew

  • Add seasoned turkey to crockpot and mix in with veggies and herbs
  • Then add in curry powder and bay leaves stir in thoroughly with wooden spoon.
  • Add in vegetable broth and mix all together in crockpot
  • Cover crockpot and let slow cook for 3-4hours

Cooking rice

  • Wash 3 cups of rice thoroughly then set aside
  • Add to medium sized pot 1 cup of water
  • Add 1 1/2 cups of coconut milk
  • 1 tsp. of sea salt
  • 1 tsp. of scotch bonnet pepper sauce (optional)
  • 1 sprig of thyme
  • 2 tsps. Of vegan butter
  • Set stove to medium heat
  • Add washed rice to pot and cover
  • Let cook for 15 mins on medium heat
  • Then turn down heat to low and cover and let cook for 20 minutes or until all water is gone.
  • Fluff with fork
  • Serve with turkey stew
