Black is Beautiful and delicious too! Forbidden Rice Helps to prevent Diabetes

Despite being less popular than brown rice or wild rice, black rice, known as forbidden rice, is an ancient grain that has even more impressive health benefits than most other closely related rice varieties.

Not only is it the type of rice that is richest in powerful disease- fighting antioxidants, but it also contains dietary fiber, anti-inflammatory properties, and has the ability to help stop the development of diabetes, cancer, heart disease and even weight gain.  So try this delicious nutty tasting rice in a stir fry.

Ingredients:

1 cups of forbidden rice  note: (1 cup of raw forbidden rice yields 3 cups when cooked)

1 3/4 cups of water

2 tbsp of coconut amino

2 cups of veggie meat (I use Morning Star veggie grillers)

1/2 cup of carrots cut julienne style

1/2 cup(or handful) of whole snow peas

1/2 cup of bell peppers cut in cubes (1/4 red, 1/4 yellow and 1/4 orange peppers)

1 tbsp of fresh lime juice

1 sprig of fresh marjoram

1 sprig of fresh thyme

1 sprig of fresh basil

1 sprig of fresh rosemary

2 sprigs of cilantro

1 tsp of sea salt

2 tbsp of coconut amino

4 tbsp of grape seed oil (or your oil of choice): grape seed oil cooks well at high heat

1 tsp of jerk sauce

1 medium size white onion chopped

3 cloves of garlic sliced

1 tsp of all spice aka pimento seeds

Putting it all together:

  1. Combine 1 3/4 cups of water, 1 cup of rice and a pinch of sea salt.  Bring to a boil over high heat. Cover, reduce heat and simmer for 30 minutes.
  2. In a wok or large skillet add 2 tbsp of grape seed oil on high heat.  When hot add onions, garlic and pimento/all spice and saute for 3 minutes.  Lower heat to medium.
  3. Add bell peppers and saute for 2 minutes.  Then add snow peas and sea salt.
  4. Add veggie patties and saute for 5 minutes.
  5. Add lime juice, jerk sauce, marjoram, thyme, rosemary, basil and saute for 3 minutes.
  6. Add carrots and coconut amino and let simmer for 5 minutes
  7. Add 2 tbsp of grape seed oil and cooked forbidden rice. Let simmer for 5 minutes
  8. Add cilantro (mix it in thoroughly)
  9. serve

Recipe serves 4 portions.
